Green Onions
Look for green onions that are crisp with fresh, tender green tops and slightly white ends. These reduce the risk of coronary heart disease with high-fiber fruits & vegetables. Refrigerate. Do not wash until just before use.

Romaine/Romaine Hearts  
Good quality romaine should be fresh, crisp, and well-colored. Many historians believe that Romaine first spread to western Europe with the popes who moved to Avignon. Refrigerate in crisper.
 
Spring Mix
Mesclun, also called Field Greens or Spring Mix, is a classic green salad mix originating in the South of France. It consists of a mixture of very young leaves and shoots of wild and cultivated plants, including endive, dandelion, arugula, lambs lettuce, oak leaf, mache, radicchio, chervil, sorrel, frisee, purslane, etc. Sometimes edible flowers are included. Watercress: Avoid watercress that appears wilted, bruised, or yellowed. Good quality watercress should be fresh-looking and well-colored. Refrigerate. Watercress should be stored at 35 degrees F. Keep moist and wrapped in plastic.
