Celery is thought to have originated in the Mediterranean and was used by the ancient Greeks and Romans as a flavoring. Now, nearly two billion pounds of celery are grown each year in the U.S.
How to Choose CeleryHigh quality celery consists of stalks which are well formed and straight with rigid ribs. Ribs should snap crisply when pulled apart. Inside surface of ribs should be clean and smooth. Leaves should be pale to bright green in color, and show no signs of wilting.
Where is Celery Grown?Pacific grows celery in California from April to November and in Yuma, Arizona from November through March.
How to Prepare CeleryTo clean celery, cut off the base and leaves, then wash stalks under running water. The outside of the stalk can be peeled with a vegetable peeler to remove the tougher and stringy parts of the celery. Make sure to discard the peels.
How to Store CeleryCelery has a high water content and has a tendency to wilt quickly. Therefore, it should not be kept at room temperature for too long. To regain crispness, sprinkle celery with water and place it in the refrigerator for several hours.
Nutritional InformationCelery is an excellent source of vitamin C. It is a very good source of dietary fiber, potassium, folate, molybdenum, 
manganese and vitamin B6.
