Leaf lettuce generally refers to Green Leaf, Red Leaf, Romaine (Cos) or Bib (Boston or Butter). They are also known as loose leaf lettuce because it does not form a compact head. The leaves on the head arrange themselves around a central stalk.
How to Choose Leaf LettuceRegardless of the type, all lettuces should have firm leaves and no signs of yellow or brown discoloration, slime, or spotting. In addition, Romaine and Boston heads should be
compact and the stem ends should not be too brown.
Where is Leaf Lettuce Grown?Pacific leaf lettuce is grown in Salinas, California from April to November and in Yuma, Arizona from November through March.
How to Clean Leaf LettuceTo clean lettuce, first remove the outer leaves. Rinse the lettuce just before serving in very cold water and pat dry with a clean towel. Tear the remaining leaves to the desired size and discard the bottom root portion. Do not cut or slice lettuce leaves in advance as cut edges can quickly discolor.
How to Store Leaf LettuceWhen you bring the lettuce home, keep it either stored loosely in a plastic bag, or wrapped in a wet towel around the base of the lettuce before storing in the refrigerator crisper. Romaine and leaf lettuce should be washed and dried before storing in the refrigerator to remove their excess moisture, while Boston lettuce need not be washed before storing. Romaine lettuce will keep for five to seven days, Boston and leaf lettuce for two to three days. All types of lettuce should be stored away from ethylene-producing fruits, such as apples, bananas and pears, since they will cause the lettuce leaves to brown. Before use, always wash loose leaf lettuce, and check for bugs and slugs which may have traveled to the market with your lettuce.
Nutritional InformationRomaine lettuce is an excellent source of vitamin A, folate, vitamin C, manganese and chromium. In addition, romaine lettuce is a very good source of dietary fiber, vitamin B1, vitamin B2 and potassium. Red and Green Leaf contain large amounts of vitamins A and K, plus the antioxidants beta carotene and lutein.
